ITALIAN COOKIES
4 cups flour
1 1/8 cups sugar
3/4 teaspoon salt
4 teaspoons baking powder
1 stick melted butter
4 eggs
1 1/2 teaspoons lemon extract
1 teaspoon vanilla
1/8 cup orange juice
1/8 cup whiskey
1 heaping soup spoon Crisco
Mix the above ingredients (will have to use hands).
Grease cookie sheet.
Shape dough into figure eights by rolling a pencil-like piece of dough on a mat or aluminum foil and twist it into the figure eight.
Bake at 325 only until golden (light) on the bottom, approximately 10 minutes. Cookies will look soft, but will harden as they
sit. Make confectioners sugar glaze and drizzle on top of cookies.
Drizzle only a row or two at one time and sprinkle with colored jimmies (sprinkles) before the icing hardens.
Confectioners sugar glaze: I just pour half box or more of confectioners sugar, add one teasp. vanilla then add milk to make it a runny consistency. More creamier than frosting but not too thin.
